I have a favorite brownie recipe and a favorite chocolate chip cookie recipe.
Brookies are dessert pie with one layer of brownies and one layer of cookies.
How to Make Brookie Pie?

This gloriously decadent Brookie pie is a combination of fudgy brownies and gooey chocolate chip cookies. It’s rich and totally indulgent a classic crispy brownie top, fudgy middle and chewy cookie base

To make Brookie Pie, you start by making a batch of brownie batter, from scratch and a batch of chocolate chip cookie dough
• Preheat the oven to 350F. Butter the sides and bottom of a 8 inch springform pan. Line the pan with parchment paper. Set aside
To make brownie layer:
• In a medium bowl, melt the chocolate and butter stirring occasionally, until smooth.
• Remove the pan from heat and stir in the sugar
• Add instant espresso powder
• Incorporate the eggs one at a time into the mixture and whisk until well combined
• Stir in the vanilla extract then add the flour, salt, cocoa powder and stir well. Stir in the chocolate chips or chunks.
• Pour the batter into the prepared pan and set aside until you prepare the chocolate chip cookie dough

How do you know when Brookies are done?
The brookies will be nice and golden brown on top and you’ll see around the edges that the brownie looks done. The toothpick test doesn’t really work because the brownies stay fudgy, so don’t bother. Once the cookies are golden they’re done.

How do you store Brookie Pie?
Brookie pies keep well at room temperature for about a week as long as they’re stored in an airtight container. Everyone finds them so difficult to stop eating, though, that they rarely last even a couple of days!
How do you freeze Brookie Pie?
Brookie pie freeze well when sliced first! Freeze them in a single layer or with parchment paper between the layers to keep them from freezing.

Ingredients

  • For the Brownie:
  • 3 oz semisweet chocolate (55%-70%) , for melting

  • 3/4 cup unsalted butter

  • 1 teaspoon instant espresso powder

  • 1 cup sugar

  • 3 eggs

  • 1 teaspoon vanilla extract

  • 1 tablespoon dark cocoa powder

  • 1/2 teaspoon salt

  • 3/4 cup flour

  • 3 oz semisweet chocolate (55%-70%) , chips or chunks

  • For the Chocolate Chip Cookie Dough
  • 1 ⅛ cup flour

  • 1/2 teaspoon baking soda

  • 1 teaspoon cornstarch

  • 1/2 teaspoon salt

  • 1/3 cup unsalted butter, room temperature

  • 1/3 cup brown sugar

  • 2 tablespoon sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 2/3 cup semisweet chocolate chips or chunks (55%-70% cocoa)

  • Chocolate chips for topping, optional

Directions

  • Preheat the oven to 350F. Butter the sides and bottom of a 8 inch springform pan. Line the pan with parchment paper. Set aside
  • To make brownie layer:
  • In a medium bowl, melt the chocolate and butter stirring occasionally, until smooth.
  • Remove the pan from heat and stir in the sugar
  • Add instant espresso powder
  • Incorporate the eggs one at a time into the mixture and whisk until well combined
  • Stir in the vanilla extract then add the flour, salt, cocoa powder and stir well. Stir in the chocolate chips or chunks.
  • Pour the batter into the prepared pan and set aside until you prepare the chocolate chip cookie dough
  • To make chocolate chip cookie dough:
  • In a medium-sized bowl, whisk together the flour, baking soda, cornstarch and salt. Set aside.
  • In a large bowl, mix together the butter with both sugars until creamy.
  • Add egg and then add vanilla extract. Mix until just combined.
  • With the mixer on low incorporate the flour mixture.
  • Fold in the chocolate chips or chunks.
  • The cookie dough will be thick.
  • Spread the dough on top of the brownie batter.
  • ake the pie for 45-60 minutes or until a toothpick inserted into the center comes out mostly clean with a few moist (not wet!) brownie crumbs.
  • All ovens are different, but begin checking at 45 minutes. Loosely tent the top of the pie with aluminum foil if the edges are browning too quickly.
  • Cool on a wire rack
  • Serve with ice cream and drizzle with chocolate syrup if desired
