No bake cheesecake has always been one of my favorite desserts. The flavor is light the cheesecake is creamy and it’s dessert you can eat a lot of without feeling heavy.
While I typically save my no bake dessert for the summer, I couldn’t help but give this one a try for Valentine’s Day. Heart sprinkle and cheesecake is the way to show that special someone your love this Valentine’s Day, but they’re also delicious the rest of the year.

How to Make Valentine’s Day Cheesecake?
The cheesecake comes together quickly but needs time to chill so it can set firm enough to slice.
Just like other no bake cheesecake recipes:
Finely crush the cookies in a food processor, add melted butter and blend until it’s all moistened
Press crumb mixture onto the bottom of prepared 9-inch springform pan by lightly greasing the edges of the pan with cooking spray
Place in the freezer while you make the filling
Place 1 cup strawberries in a blender and pulse until mixture is pureed, set aside
In medium bowl, mix cream cheese and powdered sugar until smooth and creamy
In separate bowl, mix 2 cups heavy cream until soft peaks form, add Strawberry extract and continue mixing until stiff peaks form
Add cream cheese mixture into beaten heavy cream mix on low speed just to combine
Divide mixture into 2 portions in separate bowls
To the first half of the mixture add strawberries puree and few drops pink food coloring and mix on low speed to combine then pour filling over the crust
Second half of the mixture carefully spoon over of the top of the strawberry mixture
Set in the fridge to firm

How to Decorate Valentine’s Day Cheesecake?
When it comes to Valentine’s Day cake decorating, hearts and pink color palettes are tradition. Add the sprinkles, lots and lots of sprinkles…
If you’re not into pink or just want to do something different, you can use any color palette your heart desires!
Feel free to think outside the traditional Valentine’s Day color palette on this one.
How to store No Bake Cheesecake:
You can store in the refrigerator for up to 3-4 days. You can also freeze this Strawberry Cheesecake. To freeze a No Bake Strawberry Cheesecake, wrap in several layers of plastic wrap and place in the freezer. Thaw at room temperature for at least 2 hours for easier slicing. When it is still partially frozen, the taste and texture is like an ice cream cake.

Ingredients

  • For the crust:
  • 2 ½ cups Oreo cookie crumbs, about 26 Oreo Cookies

  • 6 tablespoons unsalted butter, melted

  • For the Strawberry cheesecake:
  • 16 oz. cream cheese, softened

  • 2 cups heavy cream

  • 1 cup powdered sugar

  • 1 teaspoon Strawberry extract

  • Pink food coloring, optional

  • 1 cup fresh strawberries, chopped

  • For garnish:
  • Heart shaped sprinkles, optional

Directions

  • To make crust:
  • Finely crush the cookies in a food processor, add melted butter and blend until it’s all moistened

  • Place in the freezer while you make the filling
  • Place 1 cup strawberries in a blender and pulse until mixture is pureed, set aside
  • To make strawberry cheesecake:
  • In medium bowl, mix cream cheese and powdered sugar until smooth and creamy
  • In separate bowl, mix 2 cups heavy cream until soft peaks form, add Strawberry extract and continue mixing until stiff peaks form
  • Add cream cheese mixture into beaten heavy cream mix on low speed just to combine
  • Divide mixture into 2 portions in separate bowls
  • To the first half of the mixture add strawberries puree and few drops pink food coloring and mix on low speed to combine then pour filling over the crust
  • Second half of the mixture carefully spoon over of the top of the strawberry mixture
  • Set in the fridge to firm
  • Refrigerate for at least 6 hours or until set
  • When the topping is set and cooled run a thin knife around the sides and remove the springform pan sides
  • Sprinkle heart shaped sprinkles on top of the cheesecake
  • Serve

  1. For the crust do you use the whole cookie with filling or scrape off the filling and use the cookie

     
  2. My cream cheese mixture with the puréed strawberries went too thin any suggestions as to why and what can I do to save it

     
  3. Can someone help me? I made this but it’s not holding its shape, the middle layer is leaking all over my counter. It’s the first time I made this and I’m heartbroken that it’s turned out so bad!
