This Chocolate Caramel Poke Cake is one of my favorite desserts. I always look for something interesting and I don’t like to make something I have made before. I like to make something which will be delicious and nice to my children because it is most important to me. I know that I won’t make a mistake with this Chocolate Caramel Poke Cake. Poke cake are such a fun dessert to make and they are great for potluck since they can be made ahead of time and are perfect to servings lots of people.
How to Make Caramel Poke Cake?
We start with a simple chocolate cake, I make homemade chocolate cake for this recipe but you can use cakes mix if you want. When the cake is baked remove the cake from the oven and cool 10 minute
Use the handle of a wooden spoon to gently poke holes all over the top of the cake
Pour the caramel sauce over the cake and spread into holes with spatula
Cover and refrigerate about 4 hours or overnight
The whole thing is topped with my absolute favorite easy chocolate frosting. This frosting is quick to make just combine milk, butter and sugar over medium heat, bring to a rolling boil and boil 30 seconds, then remove from heat and add chocolate chips and whisk until smooth and shiny and immediately pour over the cake
Refrigerate until set

Can I Freeze Poke Cake?
Yes, you can freeze poke cake, I recommend freezing it without the toppings.
Just wrap it tightly and keep it in the freezer for up to three months
Thaw it in the fridge before you frost and serve it

Ingredients

  • For chocolate cake:
  • 1½ cups flour

  • 1½ cups sugar

  • ½ cup unsweetened cocoa powder

  • 1 teaspoon baking powder

  • 2 teaspoons baking soda

  • 2 eggs

  • 1 cup milk

  • ½ cup vegetable oil

  • 1 teaspoon vanilla extract

  • 1 cup brewed coffee (or 1 cup boiling water if you don’t like coffee)

  • For the filling:
  • 2 cups Caramel Ice Cream Topping

  • For the topping:
  • 1/3 cup milk

  • 1/3 cup butter, softened

  • 1 cup sugar

  • 1 cup semi-sweet chocolate chips

Directions

  • To make chocolate cake:
  • Preheat oven to 350 degrees F. Grease and flour a 9×13 inch baking dish, set aside
  • In a large bowl, combine dry ingredients flour, sugar, cocoa powder, baking powder and baking soda
  • Add eggs, milk, oil, coffee and vanilla extract and beat on medium speed for 2 minutes until combine (the batter will look runny)
  • Pour into prepared baking dish and bake 30-40 minutes, or until toothpick inserted into center of cake comes out clean
  • Remove the cake from the oven and cool 10 minutes
  • To assembly cake:
  • Use the handle of a wooden spoon to gently poke holes all over the top of the cake
  • Pour the caramel sauce over the cake and spread into holes with spatula
  • Cover and refrigerate about 4 hours or overnight
  • To make topping:
  • In a saucepan, combine milk, butter and sugar over medium heat
  • Bring to a rolling boil and boil 30 seconds
  • Remove from heat and add chocolate chips
  • Whisk until smooth and shiny and immediately pour over the cake
  • Refrigerate until set
  • Serve
