It’s the most wonderful time of the year….cookie season! I really can’t get enough cookies around Christmas, so I am excited to share my recipe with you today.

How to Make Peanut Butter Mice?
There are only 4 really simple steps to make these dessert!
Make the dough:
• In a medium bowl stir together peanut butter, butter, sugars, egg and vanilla until combined
• Gradually add flour, baking soda and mix just until combined
Form the dough:
• Form the dough into a disc, wrap with plastic wrap and refrigerate until firm enough to shape, about 1 hour.
• Preheat the oven to 350F degrees and line cookie sheets with parchment paper or baking mats
• Scoop about 1 tablespoon of cookie dough into a ball, taper one side to resemble a mouse
• Place on baking sheet 2 inches apart
• Add peanuts for ears, black candy for noses and for eyes.
Bake:
• Bake for 8-10 minutes or until light golden on the surface and golden on the edges
• Immediately insert licorice pieces into warm cookies for tails.
Rest:
• Remove from pan to wire racks to cool.

Let the cookies cool completely, then store them in an airtight container.
How Long do Peanut Butter Mice Last?
Stored properly, they will last on the countertop for up to 5 days.
Can you Freeze Peanut Butter Mice?
If you want to freeze these, I recommend forming the dough balls and freezing those. Thaw in the fridge overnight, decorate then bake as directed. The dough can be frozen up to 2 months.

  • 1 cup creamy peanut butter

  • ½ cup butter, softened

  • ½ cup sugar

  • ½ cup packed brown sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 ½ cups all-purpose flour

  • ½ teaspoon baking soda

  • Peanuts, optional for ears

  • Black nonpareil sprinkles, optional for eyes and noses

  • Black licorice, optional for tails
