I love making no bake cheesecake. Since they are so simple, I can make them very quickly. I am kind of obsessed with no bake desserts. They have to be one of my favorite things to make and isn’t even summer yet. So hopefully you like them too. We start with a graham cracker crust, a delish strawberry cheesecake filling and top with whipped cream and fresh strawberries. So easy and no bake! This cheesecake bars will be perfect for everyday dessert, since we use fresh strawberries in the filling you will find amazing flavors.

How to make a No Bake Strawberry Cheesecake Bars?
• In a medium bowl, combine graham cracker crumbs, sugar and melted butter, mix until well combined
• Press crumb mixture onto bottom of the prepared 9×9-inch square pan with aluminum foil leaving an overhang on each side for easy removal. Lightly grease the edges of the pan with cooking spray, set in the freezer to firm while making cheesecake layer
To make strawberry cheesecake:
• Place 2 cups strawberries in a blender and pulse until mixture is pureed, set aside
• In medium bowl, mix cream cheese and powdered sugar until smooth and creamy
• In separate bowl, whip heavy cream until soft peaks form
• Add cream cheese mixture, strawberries puree and 1-2 drops of red food coloring into beaten heavy cream mix on low speed just to combine then add remaining 2 cups fresh strawberries, coarsely chopped and gently stir
• Spread strawberry cheesecake over the crust
• Refrigerate for at least 3-4 hours or until set
• When the cheesecake is completely set, pull the overhang of the foil to lift the cheesecake from the pan and transfer onto cutting board
• Cut and garnish with whipped cream on top and halved strawberries if desired

Ingredients

  • For the crust:
  • 2 ½ cups graham crackers crumbs

  • 6 tablespoons unsalted butter, melted

  • 4 tablespoons sugar

  • For the Strawberry cheesecake:
  • 16 oz. cream cheese, softened

  • 2 cups heavy cream

  • 1 cup powdered sugar

  • 4 cups fresh strawberries, coarsely chopped

  • 1-2 drops of red food coloring

  • For garnish:
  • Whipped cream, optional

  • Fresh strawberries halved, optional

Directions

  • To make crust:
  • In a medium bowl, combine graham cracker crumbs, sugar and melted butter, mix until well combined
