There are three main components to this bar. Each one is pretty yummy on its own, but combined together they are incredible:
• Shortbread layer
• Caramel layer
• Chocolate layer
How to Make Shortbread Bars?
The first step in making these millionaire bars is to make the shortbread.
• Cream the butter then add the sugar, salt and beat until light and fluffy.
• Add the vanilla and egg yolk then mix until combined.
• Add the flour in a few batches and mix until just combined.
• Transfer to your prepared pan and press into an even layer
• Bake at 350F for about 25 minutes or until the edges are golden.
Making the caramel layer for the shortbread bars isn’t difficult, but it does require your undivided attention.
• Combine the butter, brown sugar, salt, vanilla, sweetened condensed milk and corn syrup to a saucepan
• Place over medium heat and whisk until melted and combined then continue whisking over the heat while the caramel bubbles and darkens to a richer color
• You’ll see it starts to thicken and pull away from the edge, 5-6 minutes, your caramel is ready.
• Spread over the shortbread layer and let cool completely.
Chocolate Layer:
• In a small saucepan, heat the heavy cream over medium heat until it just begins to bubbles around the edges, but does not boil.
• Reduce heat to low, add chocolate chips and whisk until the mixture is smooth and glossy
• Pour the chocolate over the caramel and smooth into an even layer.

Millionaire Shortbread takes all the goodness of caramel, smears it over some buttery shortbread and the tops it off with chocolate. I like to do a sprinkle of sea salt on top for extra taste, but you can skip that part.
How Do You Cut Millionaire Shortbread?
The best way to cut these millionaire bars is to run a very sharp knife under hot water, wipe dry and then cut. Repeat between each cut, cleaning and warming the knife each time to avoid any crumbs.

How Long do They Last?
Store the squares in an airtight container there’s no need to refrigerate. They’ll keep well for up to 5 days.

Ingredients

  • For the Shortbread Crust:
  • 2 cups all-purpose flour

  • 1 cup unsalted butter room temperature

  • 1/2 cup granulated sugar

  • 1 egg yolk

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon salt

  • For the Caramel Layer:
  • 1 14- oz can sweetened condensed milk

  • 1/2 cup unsalted butter cut into Tablespoon-sized pieces

  • 1 cup light brown sugar packed

  • 1/4 cup corn syrup light or dark

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon salt

  • For the Chocolate Layer:
  • 1 1/2 cups semisweet chocolate chips

  • 1/3 cup heavy cream

  • 1 pinch sea salt to sprinkle on top

Directions

  • Preheat oven to 350F and line a 9×9 inch baking dish with parchment paper, set aside
  • To Make Shortbread:
  • Cream the butter then add the sugar, salt and beat until light and fluffy.
  • Add the vanilla and egg yolk then mix until combined.
  • Add the flour in a few batches and mix until just combined.
  • Transfer to your prepared pan and press into an even layer
  • Bake at 350F for about 25 minutes or until the edges are golden.
  • Let the shortbread base cool almost to room temperature while you prepare the caramel filling
  • To make Caramel Layer:
  • Combine the butter, brown sugar, salt, vanilla, sweetened condensed milk and corn syrup to a saucepan
  • Place over medium heat and whisk until melted and combined then continue whisking over the heat while the caramel bubbles and darkens to a richer color
  • You’ll see it starts to thicken and pull away from the edge, 5-6 minutes, your caramel is ready.
  • Spread over the shortbread layer and let cool completely.
  • Once cooled, let set in the fridge for a few hours or overnight.
  • To make Chocolate Layer:
  • In a small saucepan, heat the heavy cream over medium heat until it just begins to bubbles around the edges, but does not boil.
  • Reduce heat to low, add chocolate chips and whisk until the mixture is smooth and glossy
  • Pour the chocolate over the caramel and smooth into an even layer.
  • Sprinkle with salt if desired then chill and cut into pieces.
