How to Make Cheese Crackers?


• In the bowl of a standing mixer fitted with the paddle attachment add cheese, butter, flour, cornstarch and salt and stir to combine until the mixture is crumbly
• Add 2 tablespoons of water and mix until a dough forms ( if needed add an additional tablespoon of water)
• Divide the dough in half and roll into logs
• Wrap the logs of dough in plastic wrap and chill in the refrigerator for one hour
• Preheat oven to 350˚F. Line two baking trays with parchment paper
• Roll each log of dough out on a lightly floured surface to 1/8-inch thickness.
• Use a pizza cutter to cut the crackers into one-inch squares. Spread on the baking trays with space between the crackers.
• With a toothpick, make holes in the centers of each cracker.
• Bake about 12-15 minutes until the crackers are crispy

What Kind of Cheese Do You Use?


I used cheddar in my crackers, which is what gives them the flavor of the original, but you can use different kinds if cheeses. The firmer the cheese the better for holding shape and texture.


Can You Add Seasoning?


Yes, absolutely! You can use:
• Onion powder
• Smoked paprika
• Oregano
• Garlic powder….


Very important notes:


• Use cold butter to get the flaky crackers,
• If you use salted butter, do not add salt
• Place dough in refrigerator for at last 1 hour before rolling
• Roll thinly about 1/8 of an inch
• Baking time may vary depending on thickness of crackers

Ingredients

  • 1 ½ cups cheddar cheese, shredded

  • 1 cup all-purpose flour

  • 1 ½ teaspoons cornstarch

  • ½ teaspoon salt

  • 6 tablespoons unsalted butter, cold and cut into 6 pieces

  • 2 tablespoons cold water
