I’m excited to share today’s recipe with you! It’s Caramel Pecan Cookies. They
taste just like caramel candies, which are basically pecan clusters covered in caramel. These cookies have buttery dough with crushed pecans and filled with yummy toffee bites, so you get all the same flavors!
No Thanksgiving table is complete without Caramel Pecan Cookies!


How to Make Caramel Pecan Cookies?
• Preheat the oven to 350°F (176°C). Line a cookie sheet with parchment paper or a silicone baking mat. Set aside.
• Cream the butter and sugar together in a stand mixer on medium-high speed or in a large bowl with a hand mixer until light and fluffy.
• Add egg and vanilla and mix well until combined, scraping down the sides of the bowl.
• Add flour, cornstarch, baking soda and salt, and mix until a dough forms.
• Add pecans and toffee bits and mix together just until they are incorporated into the cookie dough.
• Make balls of cookie dough about 1 tablespoon in size with your hands
• Place the balls of cookie dough onto the lined cookie sheet and press the cookies down slightly before baking.
• Bake for about 8-10 minutes or until cookies lose their shine on top.
• Remove the cookies from the oven and allow to cool on the cookie sheet for 3-5 minutes, then remove to a cooling rack to finish cooling.
• Top with caramel sauce if desired

Ingredients Notes:
• Cornstarch in the cookie dough yields lighter textured cookies, it reduces the risk of cookie spreading

Storage tips:
Baked cookies can be stored in an airtight container at room temperature. To
freeze, allow the baked cookies to cool and set. Place cookies in a freezer safe
container, separating layers with wax paper. Freeze for up to 3 months. Allow to thaw before eating.
