Fall is officially here! It is time for apples, pecans, pumpkins and cooler weather.
This cheesecake bars represents everything I love about this time of year. One of my favorite things about fall is apple desserts and apple recipes!
HOW TO MAKE CARAMEL APPLE CHEESECAKE BARS?
This bar has a few steps, but the steps are pretty easy and it is so worth it.
There are three main parts to this recipe:

  • the crust,
  • the cheesecake filling and
  • the caramel apple topping

An easy crust recipe can be made from graham crackers on any cookies.

HOW TO MAKE CRUST?
In a medium bowl, combine graham cracker crumbs, sugar and melted butter, mix until well combined.
HOW TO MAKE CHEESECAKE?
In medium bowl, mix cream cheese and powdered sugar until smooth and creamy
In separate bowl, whip heavy cream until soft peaks form
Add cream cheese mixture into beaten heavy cream add vanilla, cinnamon and caramel topping and mix on low speed just to combine
HOW TO MAKE CARAMEL APPLE FILLING?
This caramel filling recipe is so simple. You will never want store-bought again!
They are only few natural ingredients that all go into pot at once and then you whisk until it’s thickened to your liking.

HOW TO CUT THEM?
Before cutting, the bars should be thoroughly chilled in the refrigerator for at least 3- 4 hours or even overnight.
To keep the edges of yours bars neat and tidy, whip the knife off with a damp cloth in between each slice.

Caramel Apple Cheesecake Bars

Ingredients

  • For the crust:
  • 2 ½ cups graham crackers crumbs

  • 6 tablespoons unsalted butter, melted

  • 4 tablespoons sugar

  • For the cheesecake:
  • 16 oz. cream cheese, softened

  • 1 cup heavy cream

  • 1 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 1 teaspoon cinnamon

  • ½ cup caramel topping

  • For the Caramel Apple filling:
  • 1 cup brown sugar

  • 4 tablespoon unsalted butter

  • ½ cup heavy cream

  • 1 teaspoon vanilla extract

  • 3 apples, peeled, cored and diced

  • For garnish:
  • Caramel sauce, optional

Directions

  • To make crust:
  • In a medium bowl, combine graham cracker crumbs, sugar and melted butter, mix until well combined
  • Press crumb mixture onto bottom of the prepared 9×9-inch square pan with aluminum foil leaving an overhang on each side for easy removal. Lightly grease the edges of the pan with cooking spray, set in the freezer to firm while making cheesecake layer
  • To make cheesecake:
  • In medium bowl, mix cream cheese and powdered sugar until smooth and creamy
  • In separate bowl, whip heavy cream until soft peaks form
  • Add cream cheese mixture into beaten heavy cream add vanilla, cinnamon and caramel topping and mix on low speed just to combine
  • Spread cheesecake over the crust
  • To make Caramel Apple filling:
  • In a medium saucepan combine sugar, butter, heavy cream, vanilla and apples and simmer over low heat, whisking constantly or until thickened and no longer watery about 6-8 minutes
  • Gently spread over cheesecake filling
  • Refrigerate for at least 3-4 hours or until set
  • When the cheesecake is completely set, pull the overhang of the foil to lift the cheesecake from the pan and transfer onto cutting board
  • Cut and drizzle with caramel sauce if desired
