Ingredients
- For the Chicken Stew:
1 ½ lbs. chicken thighs boneless, skinless cut into small pieces
2 tablespoons olive oil
1 medium onion, diced
2 medium carrots, peeled and diced
8 oz mushrooms, sliced
3 medium potatoes, peeled and cubed
2 bay leaves
4 cups water, or as needed
Salt and pepper, to taste
Turmeric powder, optional
Chopped parsley, optional
- For the Slurry:
½ cup water
2 tablespoons all-purpose flour
Directions
- To make Chicken Stew:
- In a large pot, add oil and place it over medium-high heat and add chicken thighs stir until the chicken is mostly cooked through
- Add the onions, stirring and cooking until onion is slightly softened
- Add the mushrooms, continuing to stir for a few minutes as they cook
- Add the potatoes, carrots, bay leaves, salt, pepper and water, make sure the ingredients are covered by the water and cook for 30 minutes on medium-low heat
- To make Slurry:
- Mix together ½ cup water and 2 tablespoons flour, add a little at the time to boiling stew to reach desired consistency
- Once the stew is at the desired thickness, it is ready to serve
- Add the parsley and turmeric if desired
Notes
- Easy Chicken Stew can be frozen, but I would suggest doing it in individual portions. Once you defrost it, it cannot be refrozen, so only take out what you plan to eat.
