These Cherry Pie Bars have everything I love about cherry pie but an easier bar form.
How to make Cherry Pie Crumb Bars?
These bars start with a crumb crust and topping. They are filled with fresh cherries. You can use fresh or frozen, but thawed before baking.
Then the topping is sprinkled with sugar before baking.
After baking, allow the bars cool so that you can cut them into neat slices. If desired you can dusted with powdered sugar or with a scoop of vanilla ice cream or drizzle over a simple icing made from powdered sugar, milk and a drop of almond extract.

These bars are easy to serve, store and pack up. You can enjoy them straight from the fridge or at room temperature.
Can you freeze them?
I would guess yes. But the truth is these never last long enough to test that. We consume every crumbly, cherry filled bite before they have a chance to visit the freezer.

Cherry Pie Crumb Bars

Ingredients

  • For the crumb:
  • ½ cup unsalted butter melted, cooled to room temperature

  • ½ cup granulated sugar

  • 1½ cup all-purpose flour

  • ½ teaspoon baking powder

  • ½ teaspoon baking soda

  • Pinch of salt

  • For the filling:
  • 2 cups fresh cherries, pitted

  • 1 tablespoon lemon juice

  • 1 tablespoon cornstarch

  • 1 tablespoon sugar

Directions

  • Preheat oven to 375 degrees F
  • Line an 8×8 inch square baking pan with parchment paper and spray with cooking spray, set aside
  • In a medium mixing bowl, stir together cherries, lemon juice and cornstarch
  • In a large mixing bowl, stir together melted butter and sugar, add flour baking powder, baking soda and salt and stir with a fork until the mixture resembles crumbs
  • Reserve ¾ cup of the mixture
  • Press remaining crumb mixture into the bottom of prepared pan
  • Spread cherry filling over the crust
  • Sprinkle remaining crumb mixture over cherry filling
  • Sprinkle sugar over crumb topping
  • Bake for 20 to 25 minutes or until the top is golden
  • Cool completely before cutting

Notes

  • Store leftovers in a covered container in the refrigerator up to 3 days.
