It’s one of my favorite breakfasts that I can prepare ahead of time and enjoy throughout the week.
HOW TO MAKE BLUEBERRY BANANA OATMEAL CUPS?
To make these cups, you will start by mixing together mashed bananas, eggs and dry ingredients – oats, brown sugar and baking powder.

Old Fashioned Rolled Oats – the star ingredients of these cups! I like to use rolled oats, because they are less processed and give a good texture to the oatmeal cups.
Mashed banana – you will need 1 cup of mashed bananas which is equal to about 2 medium ripe bananas
Eggs – the egg helps hold the oatmeal cups together
Vanilla extract – vanilla adds a little flavor
Blueberries – stir in 1 cup fresh or frozen, you can customize with various berries, dried fruit and nuts.

HOW TO STORE BLUEBERRY BANANA OATMEAL CUPS?
Store oatmeal cups in an airtight container in the refrigerator for up to one week.
These oatmeal cups will freeze well for up to 3 months. When you’re ready to enjoy them, just thaw them overnight in the refrigerator and warm them for 20-30 seconds in the microwave.

Ingredients

  • 1 cup blueberries, fresh or frozen

  • 2 medium bananas, ripe

  • 2 eggs

  • 2 cups old fashioned oats

  • 1 cup brown sugar

  • 1 teaspoon baking powder

  • 1 teaspoon vanilla extract

Directions

  • Preheat oven to 425 degrees F
  • Line standard muffin pan with 12 liners or grease a muffin pan with nonstick cooking spray, set aside
  • In a medium bowl, mash banana with a fork
  • In a large bowl, beat the eggs add rolled oats, brown sugar, baking powder, vanilla extract then add mashed bananas and mix to combine
  • Gently stir in the blueberries and mix
  • Pour the mixture into the prepared muffin pan, filling each cup evenly and bake for 15 minutes or until the cups are golden brown
  • Remove from the oven and let the muffins cool in the pan for 5 minutes
  • Serve
