What a great way to let your kids join in the Easter fun. Surprise cupcakes are treat everyone can enjoy and so easy to make. The best part is you can use so many different things inside the cupcake itself. You can fill your cupcakes with just about anything edible. These cupcakes will bring smiles to everyone!
How to Make Surprise Cupcakes?
These cupcakes start with a fabulous, buttery vanilla cupcake recipe.
This is the only vanilla cupcakes recipe you will need.
They are super easy to make and the texture is light, fluffy and melt in your mouth good.
You can, of course substitute any flavor, but you can’t go wrong with these, making a minor incision, filing with M&M’s mini and sprinkles and topping with frosting!
You can use your favorite variety of sprinkles in your favorite colors. I like to make with M&M’s mini and sprinkles
How to Make Vanilla Frosting?
A simple 5 ingredients for Vanilla frosting, I use it to top off my favorite cake or cupcake recipe.
• Using a hand or stand mixer, beat butter until creamy, slowly mix in powdered sugar 1 cup at the time
• Add salt and vanilla then add 2 tablespoons of heavy whipping cream
• Beat at medium high speed until smooth, adding more cream as needed for desired consistency
• Divide the frosting into 3 bowls, leave one the original color and then color the two with the colors pink and blue or with the colors your chose
• Spoon the colors into a piping bag, focusing on the sides more so colors come out at once and pipe
Making these will make you a hit at whatever Easter gathering you have going on or even with your family. I don’t know about you, but as much as I adore Christmas themed baking, Easter themed baking is just so pretty. Pastel colors and all the different sprinkles are just the BEST. Ingredients
- For Vanilla Cupcakes:
1¼ cups all-purpose flour
1¼ teaspoons baking powder
½ teaspoon salt
½ cup unsalted butter softened
¾ cup sugar
2 large eggs, room temperature
2 teaspoons pure vanilla extract
½ cup buttermilk, room temperature
- For Filling:
M&M’s mini, optional
Sprinkles, optional
- For Frosting:
1 cup unsalted butter softened
3 cups powdered sugar
¼ teaspoon salt
1 tablespoon vanilla extract
3 tablespoons heavy whipping cream
Pink, blue food coloring
Directions
- To make Vanilla Cupcakes:
- Preheat oven to 350F and line a cupcake pan with cupcake liners
- In a medium bowl, whisk together flour, baking powder and salt, set aside
- In the bowl of an electric mixer, beat butter and sugar on medium-high speed 5 minutes until thick and fluffy, scraping down the bowl as needed
- Add eggs one at a time, beating well each addition then scape down the bowl
- Add vanilla and beat to combine
- Reduce mixer speed to medium and add flour mixture in thirds alternating with buttermilk, mixing to incorporated with each addition, scape down the bowl as needed and beat until just combined and smooth
- Fill the prepared cupcakes pan 2/3 full of the batter and bake 18-20 minutes or until a toothpick inserted in the center comes out clean
- Let them cool in the pan for 5 minutes, then transfer to wire rack and cool to room temperature
- To make frosting:
- Using a hand or stand mixer, beat butter until creamy, slowly mix in powdered sugar 1 cup at the time
- Add salt and vanilla then add 2 tablespoons of heavy whipping cream
- Beat at medium high speed until smooth, adding more cream as needed for desired consistency
- Divide the frosting into 3 bowls, leave one the original color and then color the two with the colors pink and blue or with the colors your chose
- Spoon the colors into a piping bag, focusing on the sides more so colors come out at once and pipe
- To assemble the cupcakes:
- Using a small paring knife cut the center out of the cupcake in the shape of a cone
- Remove the cone and cut away all but the top ¼ inch, leaving a small disk of cake.
- Fill the hole of each cupcake with M&M’s mini and sprinkles and top with the disk of cake
- Frost cupcakes with the swirl frosting and top with additional sprinkles, if desired
- Store in an airtight container in refrigerator for up to 4 days
