How To Make A No Bake Peanut Butter Cheesecake
To start, you will make an Oreo cookie crust. Everything is better with Oreo, right?!
There is no need to bake it, you can just refrigerate it until you are ready to add the filling.
For the filling, combine cream cheese and sugar until smooth and creamy
In separate bowl whip heavy cream until soft peaks form add vanilla extract and continue mixing until stiff peaks form
Add cream cheese mixture into beaten heavy cream and mix on low speed just to combine
Add Peanut butter and mix on medium speed until well incorporated
Spread Peanut butter cheesecake filling into the bottom of the Oreo crust
Finally, top your cheesecake with chocolate topping and sprinkle candy pieces
You could easily leave out the chocolate topping. Alternatively, it is delicious with whipped cream on top instead.

You can store this cheesecake in the refrigerator for 5-6 days covered tightly.


How to freeze No Bake Peanut Butter Cheesecake
This cheesecake also freezes very well, so you can make it way in advance and thaw it out come Thanksgiving or another one of the upcoming holidays.
To freeze a No Bake cheesecake, wrap in several layers of plastic wrap and place in the freezer.
Freeze for up to 3 months before serving.
Thaw at room temperature for at least 2 hours for easier slicing. When it is still partially frozen, the taste and texture is like an ice cream cake.

Ingredients

  • For the crust:
  • 2 ½ cups Oreo cookie crumbs, about 26 Oreo Cookies

  • 6 tablespoons unsalted butter, melted

  • For the cheesecake filling:
  • 16 oz cream cheese, softened

  • 2 cups creamy Peanut Butter

  • 1 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 1 cup heavy whipping cream

  • For chocolate topping:
  • ½ cup heavy cream

  • ½ cup bittersweet chocolate, finely chopped

  • For Garnish:
  • Candy pieces, optional

Directions

  • To make crusts:
  • Finely crush the cookies in a food processor, add melted butter and blend until it’s all moistened
  • Press crumb mixture onto the bottom of prepared 9-inch springform pan by lightly greasing the edges of the pan with cooking spray
  • Place in the freezer while you make the filling
  • To make Peanut Butter cheesecake filling:
  • In a medium bowl, mix cream cheese and sugar until smooth and creamy, set aside
  • In separate bowl whip heavy cream until soft peaks form add vanilla extract and continue mixing until stiff peaks form
  • Add cream cheese mixture into beaten heavy cream and mix on low speed just to combine
  • Add Peanut butter and mix on medium speed until well incorporated
  • Spread Peanut butter cheesecake filling into the bottom of the Oreo crust
  • Refrigerate for at least 6 hours or overnight until set
  • To make chocolate topping:
  • In a medium saucepan stir together cream and chocolate on low heat until the chocolate is completely melted and mixture is smooth
  • Cool and pour over cheesecake
  • When the glaze is set and cooled run a thin knife around the sides and remove the springform pan sides
  • Sprinkle with candy pieces
  • Serve
