Homemade Strawberry Pie is easy summer dessert made with homemade butter crust, fresh strawberries, Jell-O and whipped cream!
There’s nothing better than a slice of fresh strawberry pie on hot day. I love making homemade pies with fresh fruit when it is in season when strawberries are juicer and sweeter! This simple dessert is made with only delicious natural flavor from strawberries. Fresh strawberry pie has three main components: the homemade pie crust, the fresh strawberry pie filling and whipped cream that get piped on top.
How to Make Homemade Strawberry Pie?
Make the pie crust:
• In medium sized bowl, mix together flour and salt
• Cut in butter with forks or pastry blender until mixture is pebble sized crumbs
• Add ice cold water and blend until mixture pulls together
• Roll into ball and place on lightly floured surface
• Roll out dough to about 10″ circle (make sure your measure your pie plate because some are 9″ or 10″, depending on which size you have roll your dough out 1″more than your size pie dish to ensure there’s going to be enough to go up the sides)
• Gently roll dough around rolling pin and unroll over 9″ pie pan
• Gently press and smooth the crust down and up the sides until it fits snug in the dish, use a fork to poke holes in bottom
• Preheat oven to 350 degree
• Bake for 15-18 minutes or until edges are browned
• Allow to cool
• Layer bottom with the sliced strawberries, set aside
• In a saucepan, stir together water, sugar and cornstarch and bring to a boil
• Simmer, stirring constantly, until thickened
• Remove from the heat and add Strawberry Jell-O and stir until dissolved
• Pour mixture over strawberries
• Refrigerate until set
• Garnish with whipped cream
Tips for Making Strawberry Pie:
I used a homemade pie crust for this recipe but you can also use a Graham Cracker Crust or a store-bought pie crust to save time

Can I Use Frozen Strawberries Instead of Fresh?
No, this recipe is best when made as a fresh strawberry pie. Even if you thawed the frozen strawberries first, their texture would be much different than fresh strawberries and the pie wouldn’t set up right.
How Long Will Strawberry Pie Last?
Fresh strawberry pie can be stored in the refrigerator for up to 5 days, but each day will lose a little more of its vibrancy and texture so we try to eat it within 3 days.
