We usually make these sweet treat to celebrate an event, but that is not always the case. Yes, we make them when guests are coming over for dinner or when it’s someone’s birthday, but more often than that it’s just because we are looking for some delicious healthy homemade candy.
How to Make Peanut Butter Cups?
Making cups is a really simple process. It is great project to get kids involved with.
Step one:
• Melt chocolate chips and coconut oil for 1 minute in the microwave, stir and continue heating on 30 second intervals until chocolate chips have melted and chocolate smooth
• Using a spoon pour about 1-2 teaspoons chocolate to cover the bottom of the liner into each liner
• Place tray into freezer for about 5-10 minutes for the chocolate to set
Step two:
• In a small bowl, add peanut butter, maple syrup, coconut oil and sea salt and microwave for about 15-20 seconds or until mixture is slightly melted and pourable, stir to combine
• Remove cups from freezer and pour peanut butter mixture evenly over each cup
• Place back in the freezer to set for about 5 minutes
Step three:
• Remove cups from freezer and pour remaining chocolate over each cup, using just enough to completely cover the peanut butter layer, sprinkle sea salt on top if desired
• Place back in the freezer for about 30 minutes to set completely
How to Store Healthy Peanut Butter Cups?
Store leftovers in the in the fridge. They should last at least 5-7 days. For longer storage, store cups in the freezer for up to 2 months.

- For Chocolate layer:
1 cup dark chocolate chips
1 tablespoon melted coconut oil
- For Peanut Butter layer:
½ cup natural peanut butter
¼ cup maple syrup
2 tablespoons melted coconut oil
Pinch of salt

- Line a muffin tray with 10-12 cupcakes liners or silicon liners
- Melt chocolate chips and coconut oil for 1 minute in the microwave, stir and continue heating on 30 second intervals until chocolate chips have melted and chocolate smooth
