Apples are in the season throughout the year, but most especially in the fall, when growers harvest all kinds of different varieties.
This cake calls for the Granny Smith variety of apples, because their tartness helps balance the sweetness of cake.
They are also ideal for baking because they stay relatively firm when baked, so you’ll see and taste the apples in your cake.
