It looks so fan and cute, also red, white and blue colors are traditionally associated with patriotic celebrations and that is the reason why I called this cheesecake “4th July Cheesecake”.
How to make 4th July Cheesecake?
• To make crust:
• In a medium bowl, combine graham cracker crumbs, sugar and melted butter, mix until well combined
• Press crumb mixture onto the bottom of prepared 9-inch springform pan by lightly greasing the edges of the pan with cooking spray
• Place in the freezer while you make the filling
• To make cheesecake:
• In a small mixing bowl, add water and gelatin and mix until well combined. Allow to sit for 5 minutes, then microwave for 30 seconds, set aside
• Melt 10 ounces white chocolate and set aside to cool
• In a large bowl, combine cream cheese, sugar, heavy cream, vanilla extract and mix until smooth
• Add the melted white chocolate and malted gelatin and mix until very smooth
• Divide cream cheese mixture into three equal portions in separate bowls
• Reserve the first third of the cream cheese mixture in white color
• Add red food coloring in the second third and blue food coloring in the last bowl
• To make the striped effect, using measuring cups you will pour the cream cheese mixture in the center on the graham cracker crust, started with white cream cheese mixture and continue alternately with red, blue, white, red blue, white… until you use all mixture (in case your mixture is a bit thicker than it should and won’t push down and spread out previous layer, gently shake the pan to cause the spreading and make concentric circles)
• Set in the fridge to firm
• Refrigerate for at least 6 hours or until set
• When the topping is set and cooled run a thin knife around the sides and remove the springform pan sides
• Garnish with whipped cream on top and sprinkle with white, red and blue sprinkles in desired
This type of cheesecake is often called a “Zebra Cheesecake” due to the striped appearance of its slices. The zebra look is an effect that may seem difficult, but is actually incredibly simple to pull off. Using measuring cups, place the cream cheese mixture intermittently one cup at the time, alternating between the white, red and blue cream cheese mixture. You can store in the refrigerator for up to 3-4 days. You can also freeze this cheesecake, wrap in several layers of plastic wrap and place in the freezer.
